I've got iBurst on the road in the car running it and a router off my car battery; I could just as easily add VoIP if I wanted.

The only problem is that iBurst for me has always had far too much latency for VoIP. So a VoIP on the motorway is very possible... provided there is some form of wireless broadband available that is suitable.
